Pole Bean/ Snap Bean
Why do we like this bean?
Just like its extravagant namesake, Purple Peacock is a stand-out in the garden with its dark-amethyst bean pods, light purple flowers and dark leaves. But not only is this a beautiful bean, the plants are also hardy and do well in adverse conditions (heat or cold). Plants can grow up to 6 feet tall and are high yielding and early for a pole bean.
This is a great bean for fresh eating or cooking. When you cook it, magic happens! Your purple beans will turn green. You can use that as a sign that your beans are ready to eat. As a raw bean, Purple Peacock bean pods are high in anthocyanins (they lose most of their anthocyanins with cooking). If you want to get the most anthocyanins out of your purple-podded beans, eat them raw.
How to Plant: Plant bean seeds in the spring when the soil warms up. For us that is the end of May. Space seeds 3 inches or so apart and sow 1 inch or so deep. For pole varieties, sow 3-4 seeds per pole (no need to thin). Pole beans will twine/climb around poles and other vertical substrates. You can also start bean seeds indoors about 2-3 weeks before you want to plant them outside to get a head start on things.
